The various pollutants such as pesticide residues, chemical fertilizers, antibiotics and microbial toxins in agricultural and food products can be considered as a serious concern for food safety and public health. The increasing demand for accurate, fast and portable tools for on-site and low cost monitoring of these hazardous compounds caused to develop different biosensors. In recent years, biosensor design based on the isothermal amplification of nucleic acids has beed developed to monitor on-site a wide range of biological molecules with high sensitivity and selectivity. Regarding to its simplicity, high amplification efficiency and exploitation potential in various biosensors, Rolling Circle Amplification has found a special position in the word market of the food and agriculture biosensors. This technique which is based on isothermal replication of a circular DNA molecule has gained great popularity in tracking nucleic acids, proteins, peptides, small organic and inorganic molecules, heavy metals and various microorganisms. The present review reveals fundamentals of RCA along with its major priming approaches. In the following, several RCA based sensors degsined in combination with recognition elements such as antibody, aptamer and nucleic acid probes and exploiting the various reporter systems considered. Also, monitoring of the main biological molecules and important contaminants have been considered as RCA biosensing technology applications in agriculture.
